Wow, Science is so hard…all those compounds, chemical reactions, and calculated studies. That’s way too complicated for me! I’ll just stay in the kitchen with my sodium bicarbonate and peak in the oven to see if the Maillard reaction has kicked in to give my biscuits that perfect golden color. I just hope I don’t get distracted by “General Hospital” and let the pyrolysis reaction ruin another batch— again!
